Faux Treat!

I am typically not a yogurt person, but I really like these Whips. They just came out with the vanilla flavor and it is SO good. I eat it as a treat, even though I am a chocolate girl, seriously they are so good! I am eating one right now for dessert, I can't get enough.

On a side note: As some of you know I hate the cold and the snow, but Sophie on the other hand LOVES the snow. Today we had our first snow storm of the season and Sophie ran about 100 circle 8's in the snow... So funny. Here is the picture of the 8 she left behind in the snow.

Its kind of a Thanksgiving Miracle!?!?

I came home from work this afternoon to start cooking for tomorrow and this is what I found. This is not very conducive for productive cooking!! Our fridge broke a while ago, so we have been using the spare one in the basement (VERY annoying). I am so happy to have a fridge in the kitchen again. Although I will be happier when its not in the middle of the kitchen!! Happy Thanksgiving to everyone!

Also I am so excited, my next post will be about my ottoman I made and the re-done sewing bench! I think I will be done tonight... hopefully

Refinishing project

I just finished painting this cute little table a few days ago. It used to be black, didn't really match my house, but now I love it! The next project I am attempting is to upholster an ottoman, after that I am refinishing my grandmothers sewing bench.

U2

My Dad is in radio so I grew up going to concerts, I have been to more concerts than I can count. My very first memory of concert going was when I was tiny and it was the Steve Miller Band, I can't remember much but I remember my sister Heather getting her shirt signed by them. When I was 11(ish) my sisters and I meet Sarah McLaughlin, I Loved her (and still do). I tried to find the picture, but I think its buried at my parents house somewhere. When i was 16(ish) my friend Sarah and I meet 98 degrees, at the time I thought it was the coolest thing ever! There are many many more memories like that. A big thanks to my Dad for having (what I thought was) a cool job. He spent so many hours at rock,pop,classic rock and country concert with all his kids and all our friends!

When I was growing up we always had the best seat, or we were on or behind stage. So now I don't like going to concerts because I have to buy tickets, they usually aren't good seats and I never get to meet the artist. I know it sounds silly, but I was SO spoiled when it came to going to concerts.

For the last few years I have been telling Elliot that I have no desire to go to another concert (unless we are at my parents going with my Dad) except for U2 or Coldplay. U2, Coldplay and Sarah McLaughlin are my 3 all time favorites, but U2 wins by far. I have been wanting to go to U2 for Years, but there are two problems, I live in Utah and tickets aren't cheap.

So two Fridays ago I woke up at 4:30am with a killer migraine. I was less then excited because I had to be at work later that morning! A few hours later i was feeling better, so I started to get ready for work still not really excited about the day ahead. As I was almost done getting ready Elliot walks in the bathroom to talk to me. He had a Big smile on his face and asked me if I wanted to go to U2 in Vegas that night! I couldn't believe it! So needless to say I said Yes. I called in to work and had them clear my day. We left about an hour after that.

One of Elliot's friends had the tickets to U2 and he ended up not being able to go, so he asked Elliot if he would want them. My cute husband doesn't really like U2 , but he knew how much I wanted to see them. It worked out well because the Black Eyed Peas opened and Elliot loves them. Anyhow the concert was AMAZING, It was the best concert I have ever been to. If you ever have a chance to see them... do it. Elliot ended up liking it, he was happy they played all their old stuff. We had killer seats, there was a group of people two rows in-front of us that paid almost $5000 for their 4 tickets, Crazy!! I took some videos and I am sure only Karen and I will enjoy them, but i am going to post them anyway.

Grandma Bagley

Last weekend we took a road trip to California with Elliot's sisters Esther and Summer, Summers husband Steve and Mom B to go to Grandma Bagley's funeral. The funeral service was wonderful, it was great to see Elliot's family and the weather in California was beautiful. I didn't know her well, but I can tell she was a wonderful woman and she will really be missed.

Good Halloween News.

My Best Friend Sarah and her boyfrined P.J.of NINE years FINALLY got engaged last night! This morning I got the phone call telling me the good news and to ask me to be in the wedding. I was a broken record all afternoon about how excited I am for these two to tie the knot. I can't wait for the wedding next October (the month of there 10 year anniversary) in Virginia. Congratulations to the cutest new engaged couple.

A Wedding!

One of my oldest friends (by oldest I mean longest) Kristin got married on Oct. 10 2009 in the Dallas Temple. The wedding was beautiful, her hair was of course lookin good ;) and her dress was TO DIE FOR!

I wish it was summer all year round!!

I have a serious love for all thing summer! This girls trip was the perfect summer/relaxing trip. All we did was eat, sleep, layout, laugh, Eat, shop, swim and layout some more. Sounds great right?!?

My girlfriends Erin, Caroline and I all meet up in Cancun. Erin lives in New York and Caroline was in D.C.


We went to Downtown Cancun to find the "real deal" Mexican food. It was Amazing!


This day might have been the Hottest day i have ever experienced in my life! Go figure that Mexico in August would be hot.

We went para-sailing one afternoon. The water was so clear that we could see stingrays and tons of fish from the sky.



I can't even tell you how much we ate. I was a little sad when I came home and there wasn't a buffet available whenever I got hungry.

All in all it was a successful trip. We got tan we relaxed we reminisced and no one got too sick :) Good bye summer, I will really miss you!

Good buds and first haircut

This week we had my brother his wife and baby TJ here to visit. TJ and Sophie became good buds. TJ is one busy little boy and one good eater, Sophie was sure that if she followed him around she might get some scrapes of food.




I gave TJ his first haircut. It was a sneak attach, Mom in front to distract and aunt Katie sneaking around taking little snips. I miss this little man already!

Happy Fathers Day!

Happy Fathers Day to all the Dads we know, but here is a really special Happy Fathers day wish to our Dads.
As you all know we have no real reason to celebrate fathers day at our house, so we had my very sweet Grandpa over for dinner. My Grandpa LOVES Elliot, he can and will talk to him for hours upon hours. Elliot is the greatest husband, he is so cute and sweet with him.
I know that grandpa loves fish, so i made this really yummy salmon recipe. If you like salmon, you will love this recipe! I made a less spicy version for tonight.

Blackened Salmon with Blue Cheese Sauce

Ingredients

  • 1 tablespoon Italian seasoning
  • 1 teaspoon cracked black pepper
  • 2 tablespoons paprika
  • 2 tablespoons salt
  • 1 1/2 tablespoons cayenne pepper
  • 2 tablespoons butter
  • 1 tablespoon grapeseed oil, for frying
  • 4 (6-ounce) portions skinless and boneless salmon fillets

Blue Cheese Sauce:

  • 1/4 cup white wine (you can also use chicken broth)
  • 1/2 cup heavy cream
  • 3/4 cup blue cheese crumbles

Directions

Preheat oven to 400 degrees F. (I grilled mine)

In a small bowl, combine the Italian seasoning, black pepper, paprika, salt, and cayenne. Season each piece of fish with the rub.

Heat a large skillet over medium-high heat and add the butter and oil. Once the butter has melted, add the fish and cook about 2 minutes per side.

Transfer the whole pan to the oven and cook for another 4 to 6 minutes.

For the sauce:

Place the white wine into a medium saucepan and reduce by half. Add the heavy cream and allow to reduce. Add the blue cheese and whisk until smooth. Serve on top of the salmon.

Missing the Beach

The 2nd annual Glade beach trip was a blast, but I am always so sad when it is over! We were all worried about the weather, but once we got there Grandpa Tom had a conversation with the rain and it worked, we had beautiful weather.

Best dessert: Blue Bell! I love going to the south so I can get my fill of Blue Bell. We went through about 8 or 9 cartons.

It has white soft sand, cyrstal clear blue water and Dolphins!

Best restaurant: Dewey's! This was a funny little seafood shack on the shore, literally a shack. Everything was made in the trailer behind us. We went there 4 times in 7 days. Everyone got a kick out of this place.

Last year she would not even think about getting in the ocean, this year she asked to go in. Last year she had to be covered in floaties or held in the pool, this year she let uncle Elliot throw her up in the air while in the pool and she swam all by herself with no flowties... from one end to the other! Also, she is the nicest most well behaved 4 year old I have ever meet! Such a good kid!
